- Prepare a hearty, sweeter, richer, more delicious French toast using Italian pound cakes (found boxed in the grocery store) or challah bread. Be liberal with your eggs, and when you beat them, add cinnamon, brown sugar and a pinch of nutmeg to the mixture. Soak, soak, and soak your breads or cakes until they are heavy with eggs. Pour the whole mixture, extra eggs and all, onto your griddle, and cook until browned on each side. The middle will be rich and moist and soft when you cut into the slices. Invest in real local maple syrup, your own freshly whipped whip cream, chocolate chips, Nutella and local, summertime fresh fruits like bananas, strawberries and blueberries.
- Use a sweet potato batter; you have no idea how delicious your pancakes will turn out. Keep the batter thin for crepe-like delicious pancakes. Be liberal when buttering your pan. Use real butter and enough so that the pancakes are super-easy to flip. Add everything and anything to your pancakes, and let your family members choose what they’d like to add by having them drop their pieces into the pancakes as they cook. Try blueberries, strawberries, bananas, pineapple and raspberries. Use chocolate chips, white chocolate chips and nuts. Spread Nutella and pour real maple syrup over your finished products.
- Add fresh chives and Italian parsley from your garden (both are super easy to grow and maintain) to your beaten eggs, along with a splash of whole milk for creaminess and a cheese of your choice. Be liberal with your cheese. Butter the pan well and cook over medium-high heat taking care not to break the eggs into too-small pieces. It’s better to leave them in larger chunks, because it retains their moisture.
- Find local fruits, the best this season being blueberries and melons. Get a melon scooper for your kids to use, so they can scoop out little balls of melon for the salad. Add a cup of orange juice to your salad and some coconut flakes for a real summertime treat. Top with a bit of chopped mint if you like as well.
