Chicken soup will never go out of style. Chicken soup serves as an amazing “get well” component when under the weather. However, it can also be a simple and effective meal option. It is a staple of Neil Parsons‘ weekly food regimen in the Fall and Winter months. Chicken soup is healthy, yet satiating and tasty–perfect for those watching their food choices!

Below are the ingredients and recipe directions for Neil’s Simple, Lazy, Chicken Soup.

Directions

Add the following to a crock pot and set to high for two hours.

  • Chicken Broth
  • Sliced Carrots
  • Celery
  • Black Pepper (to taste)
  • Italian Seasoning (to taste)

After completed…slice up an entire roasted chicken…Which can be as cheap as $5 from Stop and Shop supermarket. Talk about value!

Next, turn the crock pot to medium for 90 min. Take a bag of noodles (Neil recommends Pennsylvania Dutch egg noodles) and boil as instructed. Strain the noodles well, then add to the crock pot. Add broth, as will fit, to near the top of the crock pot as well….

Simmer on low for 90 minutes….and DONE!!! Simple, but cheap, healthy, and it gets the job done! What more could you ask for?
